Just reading this tonight. And timely always timely-- some big losses this year in my community, and the ways grief is and is not honored in restaurants, can be very hard to bear (unfortunate pun there) and to witness-watch-work alongside. The constant frenzy can be helpful for folks who need the movement to survive emotionally (as well as of course, the $$) but the high activity level can be accompanied by all the emotional misdirected outbursts, and it all just sucks--to cause pain when/because you are feeling pain.

Thanks for this. I agree wholeheartedly. Another thought I took away from this show was also rooted in grief. The grief that comes over you when we try so hard to create food and experiences that impact and enrich peoples lives, all the while struggling to keep our sanity and make a fair living for everyone involved in the process. The grief comes from how often people fail… no matter how hard they try or how honest they are. It’s near impossible to achieve without an unreasonable level of sacrifice. Ugh.
